A healthier method works for me. Steam the potatoes till halfway soft. Coat with potato or cornflour or tapioca starch, or wholemeal wheat flour. Fry once shallow oil level. Nice crispy, not too oily.

There's no point in squeezing it. You have to stretch it and dip it in the hot water continuously. What you're doing is making sure every part of the mozzarella is cooked evenly, slowly. You should've watched a few italian recipes to learn about the process. What you made is basically indian paneer.
